greek yoghurt from milk powder

 


skimmed milk powder 180g (54.7g protein)

1 litre filtered water

4 teaspoons yoghurt starter

2 glass containers



104 F sous vide


mix in water into skimmed milk powder until smooth

(may be easier in a blender)

pour evenly into 2 glass containers

microwave at 50% to 70% power in one min intervals till the temp hits 82 C to 85 C

(the glass containers may heat up at different rates)

let cool to body temp

add 2 teaspoons yoghurt starter into each glass container and stir well

into sous vide bath for 12 hours


use chemex paper filter on top of a colander

strain whey into a large wide container (e.g. 1 litre pyrex jug)

collects about 500ml whey (about 2 cups) = about 4g protein

greek yoghurt remaining = 640g (about 50.7g protein i.e. 7.9% protein)
