Salmon and Spinach Quiche

Ingredients

Serves 4
4-6 slices of bread , crusts removed and flattened with a rolling pin
200g cooked salmon, drained, roughly broken up and skin removed
100g spinach, quickly boiled and excess water removed
2 eggs, beaten
100g cheddar cheese (note: original recipe calls for ricotta)
milk
30g grated parmesan cheese
Salt and pepper, to taste
1 tsp olive oil

How to cook:

1. Preheat oven to 200 degrees C. Grease an ovenproof baking dish with the oil.
2. Place the bread slices around the edges and middle of the baking dish, pressing the slices together so that there are no gaps. Bake in the oven for 10-15 minutes.
3. In a bowl beat the eggs, then mix salmon, spinach, cheddar cheese, parmesan cheese, salt and pepper together until well combined. Add milk as necessary to thin the mixture.
4. Pour mixture into the bread lined baking dish and bake for 25 minutes. Serve warm with salad.
