Pork Crackling

220 degrees C (check oven temp!)
for 1.5 hrs to 2 hrs

put salt over rind and leave for a few days in the fridge to draw out the water
wash and pat dry pork rind
score pork rind - criss cross
rub salt all over
rub in olive oil
put in oven on a rack
water in pan to avoid oil splattering everywhere

- i tried pan frying the bacon rind to speed up the process - seemed to help
