leek and potato rosti

500g cubed potatoes - microwave on high covered with cling film for 7 mins with salt and butter

4 stalks of leek - sliced finely and sweated in a frying pan in medium heat with olive oil, salt and butter till most of the water has evaporated

take out the leeks from the frying pan

turn up the heat to high, and add a drizzle of olive oil, and add the potatoes a bit at a time, to fry off the excess liquids and start the browning process

return the leeks to the pan and toss with the potatoes

grate a little bit of cheddar cheese on top of the potatoes and toss immediately (so the cheese doesnt fall and melt on the pan)

repeat the cheese grating process until the potatoes are sort of covered

fry and toss till brown
