Smoked pork shoulder
Rub:
Salt 1 tbsp
Sugar qtr cup
Cumin 1 tbsp
Pepper 1 tbsp
Cayenne 1 tbsp
Paprika 2 tbsp
Brine pork for 12 hours
Tie pork joint to keep it in shape
Rub with oil, then vinegar before applying rub liberally
Smoke to 160 f internal temp for pork roast
Smoke to 190 f for pulled pork (not yet tried)
