smoked beef rib

marinade beef rib with plenty of salt (or brine for a few days)

rub with vinegar and oil

then miso paste

(no need for salt if already brined)

also black pepper (moderate amount)

smoke at 200F

takes about 12 hours

till internal temp gets above 170 F 

ribs start to look like they are dried up... looks like a lump of wood
