baked lamb shank with mashed pumpkin



two lamb shanks
season with salt
brown in frying pan

bake in bread tin, wrapped in foil, at 165 C for two hours

with half a glass of wine
tomato puree
cumin
a few cloves of garlic


put half a pumpkin in a saucepan and add some water
cook pumpkin over low heat till soft
mash with potato masher

serve lamb shank on bed of pumpkin mash
