Pigs trotters in vinegar

3/4 cup black vinegar
1/2 cup soya sauce
3 tbsp brown sugar
2 cups water


First blanch the trotters for 8 mins and take out to rest

Then fry a few slices of ginger and 5 cloves of garlic, crushed

Add the sauce and water and bring to a boil

Add the trotters and simmer for 40 mins


Ratio is
1 cup water / quarter cup soya / quarter cup vinegar / 1 tbsp sugar
