twice cooked chicken legs



clean chicken drumsticks and thighs, and season with salt

pan fry (no oil needed) for about 15 mins on medium heat with a sprinking of rosemary till skin is golden

transfer onto aluminium foil on a baking tray ready to form a parcel. (skin side up)

add a half glass of wine and half glass of water (or stock..)

add a couple of cloves of garlic, finely chopped

add a couple of "slices" of butter

season with salt again

close the foil parcel

165 degrees C for 30 mins

at the end of the cooking period, leave chicken in the oven for a further 15 mins with heat off (or leave on 70 degrees C for 10 mins)

take out chicken and leave to cool
