salmon and potato cakes

INGREDIENTS

Sea salt
300g cooked salmon - flaked into little pieces
300g cooked potatoes - chopped into small chunks
3 "branches" of spring onions, finely chopped
2 eggs beaten
1 clove garlic, finely chopped
soya sauce and sesame oil to taste


1/2 cup panko bread crumbs (may need more if too wet)

cooking oil for frying

Yoghurt dill sauce for serving

(next time try adding lemon zest)




INSTRUCTIONS

Mix together the salmon, potatoes, spring onions, egg and garlic

add soya sauce and sesame oil

then mix in the breadcrumbs until the right consistency for making into patties

heat up fry pan with 1/4 inch cooking oil

fry till golden on both sides

may bake in oven at 220 C for another 10 mins to firm up if needed

meanwhile make yoghurt sauce - with dill, salt, minced garlic and olive oil
