PLAIN BUTTERMILK PANCAKES

2 Eggs, separated for whites to be beaten
1 tsp Sugar
250 ml Whole milk
1 tsp Vanilla essence
60 ml Vegetable oil (2 fluid ounces/ 12 tsp)
160 g self raising flour, or make your own:

60 ml Vegetable oil (2 fluid ounces/ 12 tsp)
160 g self raising flour, or make your own:
160 g Flour
0.5 tsp Salt
2 tsp Baking powder
Separate the egg whites from the yolks and whisk until foamy
Mix all other ingredients together (including egg yolks)
Fold in egg whites
Heat small sized frying pan on the hob (or two pans if you want to be quick)
Ladle one batch of the mixture into the saucepan
Cook until browned, then flip with a spatula
Serve onto a plate and keep warm in the oven
