Pork rib "korma" curry




RIBS

clean the ribs and season with salt
fry ribs individually in cast iron pot to brown all over
set aside


CURRY PASTE

fresh turmeric & coriander - 1 to 5 ratio
one cm garlic root
one onion
two cloves garlic
one teaspoon garam masala
half tsp salt
one / two tablespoonfuls oil

blend all together to a fine paste

fry on medium heat for 6-8 mins till paste starts to caramelise

slowly add water and stir into the paste, bringing it to a boil

once curry is formed, turn town the heat to very low and pour into cast iron pot

put in the ribs and cook on very low heat for 45-60 mins, or until ribs start to fall off the bone

if possible cook the ribs in cast iron pot in the oven on low heat.  about 180 C

once ribs are done, take curry off the heat

stir in coconut cream (about 2 ringgit) - adding bit by bit until creamy enough

put back onto the stove and gently bring up to temperature and let it bubble under low heat
