Prime rib roast

Take out of the fridge and season with salt. 1kg joint.

Leave to bring up to room temperature whilst pre heating the oven to 425F / 220 C

Sear the joint on all sides

Theninto the oven for ten min at 220C

Reduce temp to 160 C

Cook till internal temp reaches 110 F then take out and let rest

Monitor internal temp as it continues to rise

I served when internal temp reached 133F
