The “Remove” temperature on the left is the target temperature to remove from heat source. The “Ideal” temperature on the right is the ideal internal temperature after resting. 



roasted 700g beef.  removed from oven at 130 F and temperature continued to rise until 145 F (keep in other oven, away from draft).  medium - just nice.  no blood

According to J. Kenji Lopez-Alt’s book Food Lab, it’s a matter of both temperature and time. As the meat will continue to cook after being removed from heating, if it reaches 150ºF/65ºC internally for around 3 minutes, chicken breast is safe to eat.
