crispy skin salmon





pick a nice fillet of salmon with a bit of fat
clean and dry the fillet

sprinkle salt on the flesh side
then flip over, and dry the skin with a kitchen towel, before sprinkling salt over the skin

preheat non stick frying pan on medium heat

wait till pan has heated up!

add a bit of olive oil and place the salmon skin side down on the frying pan

gently hold the salmon fillet down for about 10-15 seconds until it "relaxes"  (otherwise the fillet tenses up)



fry for about 5 mins on the skin side (check and see if it is crispy before turning over)

if the fish is splattering, you may partially cover the fry pan with the lid (but not fully cover, otherwise the salmon will steam)


turn the fish over and fry for 30 seconds to 1 minute on the flesh side


remove from fry pan and set aside to rest in a warm place so that salmon can cook through
