Kombu Tsukudani (Simmered Kombu) 昆布の佃煮

Hidaka Kombu (日高昆布)
INGREDIENTS
- 2 oz used kombu (kelp) (55 g, I used Hidaka Kombu from making dashi; See Notes)
Seasonings
- 1 cup water
- 1 Tbsp sake
- 1 Tbsp mirin
- 1 tsp rice vinegar
- 2 Tbsp soy sauce
- 1 tsp sugar
- ½ tsp katsuobushi (dried bonito flakes)
basically cut up the kombu into thin strips, put all the ingredients into a pot and simmer on low heat until dry
