Dal Sambar & Cauliflower

CAULIFLOWER DAL

Cook the dal:

  • Dal 100g and enough water to cover
  • add a teaspoon of salt and soak (overnight if possible)
  • Pour away water and add 700ml fresh water and half teaspoon salt
  • Pressure cook for 20 mins
  • Set aside until needed 

Spice mix: 

  • pinch cumin seeds - 0.5g  (jintan putih)
  • pinch mustard seeds - 0.5g (biji sawi)
  • Curry leaves - 2g
  • One tablespoon Baba sambar powder (mix w oil)

Vegetables:

  • One head of cauliflower
  • 1 large onion (40 grams)
  • Garlic and ginger mix - one heaped teaspoon


Fry onion, garlic, and ginger

Add spice mix (fry the dry spices briefly first before adding powder w oil)

Add cauliflower and fry till soft

Add the cooked dal and more salt if needed

Bring to a boil and simmer for 15 mins


DAL SAMBAR

Cook the dal:

  • Dal 150g and1500ml water
  • add a teaspoon of salt and soak
  • Pressure cook for 20 mins
  • Set aside until needed 


Make tamarind water: 

  • 20g tamarind to 200ml water.  
  • Mix well and strain pulp and seeds away


Spice mix: 

  • pinch cumin seeds - 0.5g  (jintan putih)
  • pinch mustard seeds - 0.5g (biji sawi)
  • Curry leaves - 2g
  • Half tablespoon Baba sambar powder (mix w oil)


Vegetables:

  • 500g vegetables (potatoes, brinjal, carrot etc)
  • 1 large onion (40 grams)
  • Few cloves of garlic (20 grams)
  • Ginger and Turmeric - sliced up


Fry onion, garlic, ginger and turmeric

Add spice mix (fry the dry spices briefly first before adding powder w oil)

Add 500g of mixed vegetables and fry till soft


Add the tamarind water, cooked dal and a half teaspoon of salt (season to taste)


Bring to a boil and simmer for 30 mins
