wagyu beef

 


500g steak


dried in the fridge overnight (uncovered) - on a plastic tray



take out well in advance of cooking time (2 hours if possible) - place on a cold pan to help bring to room temp


i divided into 2 steaks just in case the first one didnt come out well



preheat cast iron pan to 500F to 550F

season the pan with beef fat


season the wagyu on both sides with salt


total frying pan cooking time 5mins 30


first 3 mins:  1.5 mins on one side, then 1.5 mins on the other side

then flip every 30 seconds

check temp at 5 mins and remove from pan at 5 mins 30

(target internal temp 47C to 50 C for medium rare)  

let rest for ten minutes (internal temp rose to 56C to 58 C)
