Beer can chicken

 


Key:  salt at 1% of weight of chicken (may try 0.8% next time)


Wash chicken (about 1.5kg)

Salt all over including cavity

Leave exposed in fridge overnight on a tray with kitchen towel


preheat oven to max temp (250 C)

bring the chicken out of the fridge at least 30 mins prior to roasting


stand the chicken on a chiffon funnel on a tray

place into the oven with the chicken back facing the fan 

At 175 C for 35 mins (or may try 30 mins next time)


let the chicken rest for 30 mins before carving
