simple salmon pasta with courgettes and tomatoes

 


Courgettes

cut up into pizza slices.

gently fry a clove of finely sliced garlic - no colour

fry the courgettes until tender however retaining some firmness.


Salmon

marinade with sake and 1% salt.

bake in oven at 160 C for 15 min - take out and check internal temp - should be about 115F or so

gently lift off the salmon skin using a skewer and place onto baking paper in a tray

Grill on medium heat (lower rack) for about 7 mins - try not to over-brown it or it will be bitter.


Tomatoes - halve and dress with salt, olive oil and a few drops of balsamic.


Cook pasta and assemble all together!


Add salt to taste.


may want to consider egg carbonara with the penne next time
