aubergine and beef bake

 







INGREDIENTS


lean mince beef / pork

garlic

salt

paprika

egg white

aubergine

grated cheese or cheese slices


METHOD

preheat oven to 180C


working with lean mince -

add one egg white, add minced garlic, add a drizzle of olive oil - mix together then pour on top of the mince. (i forgot the garlic so i sprinkled granulated garlic at the end)

salt the mince.  

stir everything in whilst keeping the mince loose rather than one clump




slice the aubergine into round slices and arrange one layer into the baking tray.  salt this first layer




put a layer of the mince on top of the aubergine.  drizzle some olive oil on top (note: use a teaspoon or tablespoon if it is difficult to drizzle directly from the bottle)





then arrange another layer of aubergine, salt and then add mince on top.  and drizzle with more olive oil






finish with a sprinkling of paprika







cover the baking tray with foil

then into the oven at 180 C for 40 mins


remove foil, sprinkle with cheese. back into the oven for 20-30 mins.  


there will be a bit of liquid from the aubergine as it cooks so another 20-30 mins should help it dry out.  Check after 20 mins and see if it needs more time.
