easy chicken with bacon
INGREDIENTS
- 6 chicken drumsticks / 4 chicken thighs (optional - remove skin from thighs to reduce fattiness)
- Salt
- Butter
- Garlic
METHOD
season the chicken with salt and set aside
Add some olive oil to the pan
Fry chicken drumsticks / chicken thigh on low to medium heat as they need to brown slowly and cook through
if frying chicken thighs with skin on then focus on getting most of the cooking with skin side down (may want to use a kitchen towel to dab away excessive oil)
if frying chicken drumsticks then turn the drumsticks every one or two mins to ensure evenly browned
cover with a lid to keep the heat in and cook more evenly through the chicken
whilst chicken are frying then chop up 2 rashers of bacon into small pieces and add around the chicken. this will start to flavour the chicken
also add a clove of garlic chopped into a few chunks for a bit more flavour
could also consider a little bit of butter to add flavour and browning
the chicken is done when nicely browned and cooked through. this will take 20 to 30 mins of frying on low heat
