one tray chicken and potato bake

INGREDIENTS (serves 3)

1kg chicken thigh

600g potatoes

1 lemon

6-8 bay leaves

3 large cloves of garlic

2-3 sticks of leek

4-5 carrots




METHOD

preheat the oven to 200C

line a baking tray with foil for easy clean up

peel carrots and cut into small size chunks

clean and cut up leek stems (discard the end leafy parts)

peel garlic cloves and add to the tray



cut up potatoes into similar sized chunks as the carrots

cut up the lemon into quarters

put into the oven tray with the bay leaves and sprinkle with salt




prepare the chicken - decide if you want to be healthy and remove the skin, or leave the skin on and let it get brown and crispy.  Chicken came out a bit dry with the skin off though.


place the chicken pieces on top of the tray and salt all over





into the oven at 200 C for one hour.  the chicken will be done, however, check that the vege are also cooked.  if you are going to leave the tray in the oven after the cooking time has elapsed then better to set the timer for 50 mins to avoid overcooking the chicken
