Fish Gratin

Ingredients:

1lb fish fillet
2 tablespoons floor
30g butter
100g cheddar cheese
50g parmesan cheese
2 medium size potatoes

Cooking Instructions:


Making the cheese sauce:

  • Finely grate 100g of cheddar cheese into a bowl.
  • Melt butter in the pan.
  • Sift the flour slowly into the butter, stirring the flour into the butter so that the flour is coated by the butter.
  • Add milk or water, two tablespoonfuls at a time, to the pan, and stir until the flour combines with the milk/water and becomes a smooth paste.
  • Keep adding until the paste eventually thins out into a sauce
  • Take the pan off the heat.
  • Sprinkle the grated cheese into the sauce a little at a time and stir until cheese melts and combines with the sauce.
Baking the fish:

  • Peel and slice the potatoes into thin slices
  • Line the bottom of a baking dish with the potato slices, leaving enough slices to cover the top of the dish.
  • Cut the fish into 1 inch cubes
  • Lightly fry the fish in a pan with butter or oil
  • Stir the fish into the cheese sauce.
  • and pour into a baking dish
  • Cover with potato slices.
  • Sprinkle enough parmesan to cover the top of the dish and place into a preheated oven
  • 220 degrees C for 30 minutes or until the parmesan is brown
