Hot Smoked salmon

Brine overnight
Wash and pat dry
Leave in the fridge to form pellicle
Take it out of the fridge
Prepare a Paprika and olive oil rub. Paint over the surface of the fish to give it color
Smoke at low heat (190 f) till salmon reaches internal temp of 125 degrees F
