smoked leg of lamb

2kg leg of lamb - deboned and butterflied
marinade with salt and pepper, vinegar / lemon juice, olive oil, oregano and garlic


in smoker at about 200 F
smoke till internal temperature at 145 F

takes about 2 hours


(the internal temperature will be about 125 degrees F for rare, 145 degrees F for medium-rare; and 160 degrees F for medium)
