pineapple sorbet
INGREDIENTS
one ripe pineapple
one cup sugar (white)
one lemon
METHOD
put the ice cream maker bowl into the freezer and freeze overnight
remove the pineapple core and roughly chop up into chunks
put half the pineapple into a container and freeze
make sure it is loosely packed so that you can separate the chunks after freezing
put the other half of the pineapple into the fridge and chill
the next day:
chill the remaining pineapple chunks in the freezer
blend the pineapple from the fridge with one cup of sugar till the sugar has all dissolved
(can try a bit less sugar depending on how sweet the pineapple is)
add the frozen pineapple chunks to the blender a bit at a time - this will help cool down the mixture
add two tablespoons of lemon juice (maybe try 3 tablespoons to counter the sweetness)
consider adding a bit of lemon zest...
pour the mixture into the ice cream maker and churn for about 10 mins
put the mixture into a tub and continue to freeze
