Tri tip roast
Two tri tip cuts 1.7 lbs each
Wash and cure with a bit of salt
put on a rack in the fridge for a day or two to age
Preheat oven to 220 C
Roast for 25 mins
Take out and rest for 20 mins minimum
Tent with foil to get to medium done ness
