Spread eagle chicken

Slit the chicken to open up the leg from the body

Marinade the chicken with salt and oyster sauce

open up one leg put a skewer through it to hold it in the open position, and push the skewer all the way across the other open leg

put the chicken breast side down (so the fat melts off the back) into the oven

Roast chicken for 180 c in BREVILLE oven for 45 mins  (dont leave it in the oven or it will overcook)

[trying 230 C for 15 mins, followed by 160 C for 30 mins]
