spaghetti carbonarra






Ingredients

250g pasta

2 tablespoons extra-virgin olive oil

4 ounces  bacon, cubed 

1 garlic clove

2 large eggs

1 cup freshly grated parmesan cheese

Freshly ground black pepper (optional)



boil the pasta
fry the bacon

beat 2 eggs
grate parmesan cheese and add to eggs
grate a bit of garlic into the mixture

once pasta is boiled. quickly strain.  start spooning pasta into the egg/cheese mixture and stir quickly.  keep spooning a bit of pasta into the mixture at a time and keep stirring.  eggs will start to cook - but make sure they do not overcook
