slow oven baked ribs



















I'm trying an alternative to BBQ ribs... saves on the clean up!


Clean and prepare ribs, and rub all over with cooking oil.


Sprinkle the dry rub over the ribs and rub it in (see below for dry rub recipe)


Put the ribs on a roasting rack with a tray of water underneath to keep the ribs moist.  face the meat side upwards


Place the tray on the lowest rack in the oven so the ribs are protected by the water tray


into oven at 100 C (210 F) for 4 hours  (my oven timer only goes to 2 hours!!)

[trying 105 F in breville for 5 hours]

Baste ribs with sauce, then grill on high for 10 min on each side with the oven door open

Test ribs to see if they are tender enough. If not then roast at 150 C for another 15 to 30 min

BbQ sauce :

Caramelise brown sugar but dissolving in water in pan and bringing to a boil until water boils off and sugar caramelises.  Add butter and slowly add rib juice to cool the mixture.  Then add tomato sauce, grated garlic, Worcestershire sauce, liquid smoke and salt to taste. 

Dry Rub recipe:


basic rub is 50:50 salt & black pepper


1/2 tablespoon salt

1/2 tablespoon ground black pepper

add:1 teaspoon paprika


can also add:

garlic powder (1 teaspoon)
five spice powder (1/2 teaspoon)
