alternative (previous method)


put eggs into a pot of hot water (between 65 C and 70 C) for 36 mins

eggs can go into the pot directly from the fridge

check the temperature of the water regularly to ensure it doesn't exceed the range

put the fire on very low if possible, or off

yolk comes out solid, but not powdery

white is still liquid but cooked


next time try 75 C for 13 mins (chef steps) - white cooked and yolk still runny.
