Serves 4
1 large red onion, peeled
1 small aubergine, trimmed
1 large red pepper, halved, cored and deseeded
1 large green pepper, halved, cored and deseeded
1 large courgette, trimmed
3-4 tbsp olive oil
sea salt and black pepper
2 garlic cloves, peeled and finely chopped
1 tsp ground cumin
1 tsp sweet paprika
250g tinned chopped tomatoes
4 large eggs
