chai recipe


 

INGREDIENTS

500ml water

small piece of cinnamon bark (0.4g - 0.5g?)

3 whole cloves

4 cardamom seeds

2 star anise (1.5 grams)

2 tbsp condensed milk (40 gram)

2 tbsp whole / low fat milk

1 teabag (2g tea?) [really needs 1.5 bags ok for double portion]


METHOD

  • water into stainless steel saucepan, over low heat
  • add spices and bring to a gentle simmer stirring gently(< 100C)
  • simmer for 10 mins
  • add condensed milk and stir in
  • lower heat and add milk
  • bring temp back to 93 C
  • turn off heat and add teabag - steep for 5 mins.  stir gently
  • strain the tea into a teapot and serve
