multicooker sous vide chicken

 


seasoning:

salt (0.5 tsp)

soya sauce (1 tbsp)

oyster sauce (just enough to cover the chicken all over)

sesame oil (a drizzle)

a little dark soya sauce for colour

3 "fragments" of a star anise

one very small piece of cinnamon

3 ginger slices


wash whole chicken and season 

set multicooker to 70 C sous vide for 3-3.5 hours 

[too high for chicken breasts... try 60 C]

[trying chicken drumsticks at 67 C]

chicken breast should reach 65 C to be fully cooked

Optional: followed 15 mins on max temp in the breville to brown, after which breast internal temp reached 163 F (73 C)
