Braised dried chinese shiitake mushrooms

 

Ingredients

1 large pack dried mushrooms

3 dried scallops

Ginger

Garlic

2 tbsp shiao qing wine

4 tbsp oyster sauce

1 tbsp soya sauce

1 tsp salt

1 tbsp cornstarch



Method


Soak a pack of mushrooms with 3 dried scallops in boiling water in a large jug

Weigh down the mushrooms with a bowl

May need to top up hot water once the mushrooms start absorbing the liquid


the next day, remove the mushrooms and scallops.  reserve the liquid

half the mushrooms if necessary


fry a few cubes of ginger and garlic (add the garlic later as it takes less time to fry)

remove the ginger and garlic and start to fry the mushrooms 

add 2 tablespoons shiao qing wine and fry off

add the mushroom liquid 

add the 4 tbsp oyster sauce

add 1 tbsp soya sauce

add 0.5 tsp salt

add 1 tbsp cornstarch along with a cup of water



simmer for 1 hour and taste

add a bunch of spring onions at the end of the cooking process
