orange glaze for poultry

 

small shot of whiskey

small shot of cointreau

juice from a few segments of mandarin - to taste

a few pieces of mandarin peel

beef or chicken stock concentrate - about 8 ice cubes 

a small knob of butter

a few dashes of lea & perrins - to taste

honey - to taste

boil till thickened and glaze over chicken or turkey
